The Shun Premier Tim Mälzer series was designed specifically for the needs and demands of professional chefs. This premium series combines the high-quality material properties of the well-known Shun Classic series with a completely new, impressive overall look. The blade is divided into three different textures: from the spine to the middle of the blade there is a hammered finish, known as Tsuchime.
This texture is followed by a finely matt Damascus pattern typical of Shun. The blade is completed by its high-gloss polished precision edge. The elaborately worked blade is combined with a medium-brown, grained Pakka wood handle. The particularly hard and durable core steel of the blade provides enormous sharpness and long-lasting edge retention. The core of the Shun Premier blade is made of extremely hard VG Max steel and is sheathed in 32 layers of Damascus steel. This combination of different steels makes the edge hard and flexible at the same time. The double-ground blade is pleasantly light to handle and guarantees a clean, precise cut. The hammered finish – known in Japan as Tsuchime – is not only there for aesthetic reasons; thanks to the small air pockets it creates, it also makes it easier to release the food from the blade. Thanks to its symmetrical shape, the handle is suitable for both left- and right-handed users. A full tang provides stability and balance when cutting. As a special detail, the end of the handle bears an engraving of the Tim Mälzer bull's head, the trademark of the professional chef.
